Which gum acacia grade do you need?

Every application we supply into, what the gum actually does in each one, and which species fits. Read it, or let the selector do it for you.

The short answer

Gum acacia comes from two species and they are not interchangeable.

Acacia senegal carries a higher arabinogalactan-protein fraction. That protein is what anchors an oil droplet, so senegal is the species for holding oil in water in a product that stays liquid: beverage flavor emulsions, cloud systems, liquid color, cannabinoid nano-emulsion premix.

Acacia seyal carries a higher polysaccharide fraction and runs lower in viscosity at high solids. That makes it the species for carrying, coating, binding and fiber: spray-dried flavor and color, encapsulation, confectionery panning, tablet binding, fiber fortification, mouthfeel.

If you are making an emulsion, one question settles the species: does the emulsion stay liquid, or does it get dried into a powder? That distinction does more work than any other on this page, and it is the one most often missed.

Form is a much smaller question than species, and it is not a constraint. Both forms work in every application. Spray-dried is the default. Agglomerated wets out without lumping, so it is the better choice where a person reconstitutes the powder by hand: powdered beverages, stick packs, and formats of that kind.

Certification is a third, independent axis. Both species are stocked conventional and certified organic, in both forms.

What to check before you commit to a grade

These are the parameters that decide whether a gum acacia will work in your formula. They apply to any supplier, not just this one. If you are qualifying a new source, this is the list to run it against.

Species, and how to prove it

Species is the first decision and the easiest one to get wrong, because both species are sold as "gum arabic" and both look like a cream-coloured powder. Ask for optical rotation on the certificate of analysis. Acacia seyal is dextrorotatory, Acacia senegal is levorotatory, and the sign of the rotation identifies the species on its own. A blend cannot fake it.

Emulsions: does it stay liquid, or get dried?

This is the distinction that decides the species on any emulsion, and it is the one most specifications get wrong. Flavor emulsion, vitamin emulsion, color emulsion, cannabinoid emulsion: the question is the same one.

If the emulsion stays liquid, use senegal. The gum has to hold every oil droplet in suspension for the shelf life of the product, in a bottle, on a shelf, through temperature swings. That is interfacial work, it runs on the arabinogalactan-protein fraction, and senegal carries more of it. A beverage emulsion concentrate, a liquid color, a nano-emulsion premix sold on to brands: all liquid, all senegal.

If you spray-dry that same emulsion into a powder, seyal works well. Once the water is gone, the droplet is locked into a glassy matrix, and the gum stops holding an interface open and starts being wall material. seyal does that job well and usually costs less. Spray-dried flavor, encapsulated oil-soluble vitamins, encapsulated essential oils, oil powders: all dried, and seyal belongs there.

The trap is a product that is an emulsion on the way in and a powder on the way out. The word "emulsion" in the specification pulls people toward senegal, when what governs is the state the finished product ships in. If the powder is the product, you are buying an encapsulation system rather than an emulsion stabilizer. The mechanism, worked examples, and the two cases where senegal still earns its place on a dried product are in why the species depends on whether you dry it.

Form

Both forms work in every application on this page. This is worth being plain about, because form is often written into a specification as though it were a constraint. It is not. Spray-dried and agglomerated are the same gum, and neither one will fail in an application the other suits.

Spray-dried is the standard fine powder and the sensible default. Agglomerated has been through a second step that builds the particles into porous clusters, so it wets out cleanly instead of forming fish-eyes. That is better in one situation: when a person reconstitutes the powder into liquid by hand. Powdered beverages, stick packs, shaker bottles, a scoop into a glass. It also flows and compresses better on a tablet press. Those applications are marked in the tables below.

Color

seyal runs darker than senegal. In a cola or a chocolate coating that is invisible. In a white panned shell, a pastel gummy, or a clear beverage it is not. The applications below are marked for color sensitivity so you know when this is a real constraint and when it is not. Lighter grades exist and are produced by additional treatment, which is a cost and a spec question rather than a purity question.

Certification

Certified organic is available in both species and both forms, through Oregon Tilth to the USDA National Organic Program in the United States and Canada, and Ecocert in the EU. Kosher and Halal certification are in place. Ask for the certificates up front rather than after the first order, and check that the certificate names the specific grade you are buying.

Country of origin

Ours is Germany. The raw gum is collected across the acacia belt, but it is cleaned, processed and spray-dried in Germany, and that is what sets country of origin on the certificate and the customs entry. This matters more than it sounds like it should: buyers running supplier qualification need one stable country of origin on file, and a document that names a different collection country every shipment creates work for your quality team.

Documentation, per lot

A specification sheet describes the grade. A certificate of analysis describes the lot in your warehouse. You want both, and you want the COA to arrive with the material rather than three weeks later. For regulated or audited work, check that the supplier can produce the organic certificate, allergen and GMO statements, kosher and halal certificates, and a heavy metals result against the framework you are held to.

Where the material actually is

Stock position is a specification in every way that matters to a production schedule. Ask where the material sits today, not where it can be sourced from. We hold inventory in United States warehouses and most grades ship in one to two business days.

Gum acacia by application

Both forms work everywhere, so the agglomerated column marks only the formats where it is the better choice, which is where somebody reconstitutes the powder by hand. Where an application is often bought as a finished system rather than as raw gum, or where the format frequently skips gum acacia altogether, that is flagged in the row. Beverage work splits cleanly. If a flavor oil has to stay dispersed, that is emulsification and it wants senegal. If the job is body, fiber, or keeping a powder dissolving cleanly, that is seyal.

Confectionery

Panning, coating and binding run on seyal. The exception is hard candy and anything where a flavor oil has to stay put, which runs senegal. Color sensitivity is high across most of this category because the finished piece is often white or pastel.

Supplement formats are mostly carrier, binder and fiber work, which is seyal territory. This is also where agglomerated earns its place most often, because so many of these formats end up as a scoop or a stick pack that somebody stirs into water.

Cannabis & hemp products

Cannabinoid work is nearly all oil-in-water emulsion with a very small droplet target, and almost all of it ships as a liquid, so this category runs senegal. The exception is the spray-dried powder, which follows the same rule as any other dried emulsion and runs seyal. Several of these formats are bought as a finished emulsion rather than as raw gum, and those are flagged below.

Switching from a grade you already buy

Send the specification, not the trade name. Trade names are private to whoever sells them and they tell us nothing about the material. The specification identifies it exactly, whoever it came from.

What we need to match a grade:

  • Species, or the optical rotation if the species is not stated
  • Form: spray-dried or agglomerated
  • Particle size or mesh specification
  • Viscosity, with the concentration and temperature it was measured at
  • Moisture and ash
  • Certification you have to hold: organic, kosher, halal
  • The application, and anything the current material does well or badly in it

That is enough to identify the closest grade we stock. We send a sample so you can run it against your current material on your own bench, under your own conditions. If nothing we hold is a genuine match we will say so rather than send you something close enough to waste a trial on.

Which gum acacia species do I need, senegal or seyal?

Use Acacia senegal when the job is holding an oil phase in water. It carries a higher arabinogalactan-protein fraction, and that protein is what anchors the oil droplet. Beverage flavor emulsions, cloud systems, cannabinoid nano-emulsions and hard candy all run senegal. Use Acacia seyal when the job is carrying, coating, binding or adding fiber. It runs lower in viscosity at high solids, which is why spray-dried flavor, confectionery panning, tablet binding and fiber fortification all run seyal.

I am making an emulsion. Do I need senegal or seyal?

It depends on whether the emulsion stays liquid or gets dried, and that single question settles it. If the finished product is a liquid, use Acacia senegal: the gum has to hold every oil droplet in suspension for the shelf life of the product, which is interfacial work driven by the arabinogalactan-protein fraction. How do I verify the species on a certificate of analysis?

Ask for optical rotation. Acacia seyal is dextrorotatory and Acacia senegal is levorotatory, so the sign of the rotation identifies the species on its own. It is the one parameter on a COA that cannot be matched by a blend claiming to be something it is not. If a supplier will not put optical rotation on the document, that tells you something.

Do you supply gum acacia for wine fining?

Not in the form most wineries want. Wine fining and tartrate stabilization use liquid acacia preparations, and we supply powder. If a custom liquid preparation makes sense at your volume it is worth a conversation, but for standard cellar work you will be better served by a supplier who specializes in liquid oenological preparations.

Can you match a gum acacia grade I already buy?

Usually. Send the specification rather than the trade name: species, form, particle size or mesh, viscosity, moisture, ash, and the certification you need. Those parameters identify the material regardless of who sold it to you. We match to the closest grade we stock and send a sample so you can run it against your current material on your own bench.
