Stick-pack formulas put gum acacia through two separate tests: it has to meter consistently through a small filler and disperse quickly when the consumer adds water. Agglomeration changes the particle, not the gum
Standard spray-dried and agglomerated gum acacia have the same underlying polysaccharide structure. Agglomeration adds a second physical step in which fine spray-dried particles are joined into larger, porous granules, followed by drying and sieving.
The larger granules wet more evenly, sink into water faster, and produce less airborne dust during dumping and transfer. A 2018 fluidized-bed study by Rosa and colleagues confirmed that agglomeration improves the instant properties of gum acacia by increasing particle size under controlled wetting and drying conditions.
The practical difference is dispersion at the point of use. Agglomerated gum enters the water as separated granules with open spaces between the primary particles, giving water more paths into the structure. Full molecular hydration still depends on species, concentration, water temperature, pH, dissolved minerals, and agitation.
Particle size and bulk density decide whether the grade fits the line
Particle size matters when the filling equipment is sensitive to dust generation, auger feed behavior, or material flowability. A 2020 study of gum acacia powders by Rosland Abel and colleagues examined median particle sizes from about 30 to 800 micrometers and found that larger particles produce higher bulk densities. The 790-micrometer fraction recorded bulk and tapped densities of 0.79 and 0.89 g/cm3, compared with 0.63 and 0.83 g/cm3 for the commercial reference powder.
The practical difference is package volume and fill consistency. A 5 g dose occupies 10 mL at a loose bulk density of 0.50 g/mL and 7.7 mL at 0.65 g/mL. That 2.3 mL difference affects stick width, auger revolutions, headspace, and the amount of powder near the seal area. If particle size or density variation affects your line, measure both from a retained sample of the first production run to establish your qualification baseline.
The tradeoff is segregation within the finished blend. Agglomerated gum can be much coarser than citric acid, mineral salts, flavors, or high-intensity sweeteners. Line qualification should measure the composite blend's sieve profile, loose and tapped density, discharge behavior, fill-weight variation, and seal contamination under the intended run conditions.
Hydration speed includes wetting, dispersion, and full functional development
Hydration speed is often reported as one number, though it contains three separate events. Wetting describes how quickly water contacts the particle, dispersion describes how evenly particles separate, and functional hydration describes when the gum has developed its expected solution properties.
Agglomeration has its largest effect on wetting and dispersion. It reduces floating powder and dry-centered lumps, which are common failure modes when a fine powder reaches water as a compact raft. The final viscosity or emulsification performance still needs enough time for the gum molecules to hydrate.
This matters most in one-shot beverage sticks because the gum, acid, salts, flavors, and sweeteners enter the water together. A 5 g gum acacia dose produces a 2% solution in 250 mL of water and a 1% solution in 500 mL. The finished blend should be tested at both the intended dose and the shortest preparation time stated on the package.
Water chemistry belongs in the same test. Low-pH systems and concentrated mineral blends can change the hydration curve, while cold water slows molecular movement. Agglomerated gum gives the formula a better physical starting point without replacing finished-product testing in the target water.
Species choice for stick packs and dry blends
