AlluMonk is a blend of two naturally derived, low-calorie sweeteners: allulose and monk fruit extract. The combination is designed to replicate the taste and functional properties of sucrose at a 1:1 replacement ratio, meaning formulators can substitute AlluMonk at exactly the same weight as sugar with no reformulation math. The result is a product that delivers 95% fewer calories than sugar while maintaining the flavor profile that other low-calorie sweeteners can't fully replicate.

Allulose is a rare sugar found naturally in small amounts in figs, raisins, and wheat. It tastes essentially identical to sucrose, no bitterness, no cooling effect, no aftertaste, because it activates the same sweetness receptors. The metabolic difference: allulose is absorbed in the small intestine but not metabolized. It passes through without contributing calories or triggering an insulin response. The FDA recognizes allulose as distinct from other sugars and allows it to be excluded from total and added sugar counts on nutrition labels.

Monk fruit extract (luo han guo) provides additional sweetness intensity from mogrosides, which are 150 to 200 times sweeter than sucrose by weight.
