Functional performance

Organic guar gum performs equivalently to food-grade conventional guar gum in most applications. Viscosity, hydration rate, and compatibility with other food system components are governed by processing conditions and particle size specifications. Some organic grades have slightly higher residual hull content than ultra-refined conventional grades, which can affect solution clarity.
