The arabinogalactan-protein (AGP) fraction adsorbs at the oil-water interface and forms a steric barrier that resists coalescence. It is stable across a wide pH range (including acidic beverage conditions), heat-stable to pasteurization and UHT temperatures, and compatible with most beverage formulations without visual haze or sedimentation. Typical use levels for citrus or flavor emulsions: 10–25% of the emulsion concentrate (5–15% gum on oil weight). Acacia senegal is the preferred species for emulsification due to its higher AGP fraction. ### Acacia emulsion An acacia emulsion is an oil-in-water emulsion stabilized with gum acacia as the sole emulsifier and stabilizer.
